Three person tents usually possess more features than their one person / two person counterparts.  These tents usually offer larger vestibules, windows, and additional doors.  They still can be lightweight and pack somewhat small, which make them ideal for two or three person campers.  There's always plenty of head and elbow room in these larger sized tents.
